LINGCOD: Heat butter, garlic and onion in a pan then add lincod. Flip once.
GRILLED JUVENILE ONION (what's the official name for these type of onion?): Cut in half, add olive oil to cut side with salt and paprika. Wrap in tinfoil, add to grill for 4 minutes covered. Unwrap from tinfoil, place on hottest area of grill to quickly char.
Spanish rice mix, local greens and mango salsa came from our farmers market.
To form the rice, press into small, lightly greased small container then flip onto plate.
Garnish plate with onion tops.
