Smokin’ Tuna Campfire Sandwich

Give this not-so-classic tuna fish sandwich a shot on your next camping adventure! This recipe makes enough for 4 hefty sandwiches in about 10 minutes and all you need is a cooler and a camp fire! The star of the show was the flavor packed pieces of Pescavore Seafood Caribbean Jerk Tuna Jerky mixed in with all the other tasty bits of layered flavors and textures. The sustainably harvested albacore tuna was caught and canned by Sand Dollar Boat Captain George Staehling.

Ingredients

  • 1 pack Pescavore Seafood Caribbean Jerk Tuna Tidbits - rough chopped

  • 1 large can of Albacore Tuna (responsibly harvested)

  • 1/4 C Smoked Almonds, chopped

  • 2 Tbsp Capers

  • 1 Stalk of Celery, sliced

  • 1/4 C Cornichons (small pickles), sliced

  • 2 Green Onions, sliced

  • 1/2 Shallot, chopped

  • 1/2 C Mayo

  • 1/2 C Sour Cream

  • 1 tsp Worcestershire Sauce

  • Pinch of Sea Salt (Learn to make your own here)

  • 2 Jalapeños, fire roasted then sliced

  • Arugula

  • Sour Dough Bread

Method

Mix all but the last 3 ingredients in a large bowl.

As we were camping and didn’t bring a bowl, or spatula, or kitchen knife… we resorted to other means! #castiron

We skewered the sourdough bread and toasted it over the camp fire, then layered the jalapeño, arugula and tuna on top.

It was a hit with the family, neighbors and eventually a couple blue jays (oops).
